I made the lentil and macaroni soup today for lunch and it’s delicious! I subbed in spinach because that’s what was available in the store. It smelled so good while it simmered away and now we have plenty of soup for other meals too. Perfect on a cold, snowy day!

These soups look so interesting! For those who don't like the flavor of coconut milk, could you make the Creamy Tomato Pumpkin Soup with a different kind of milk?

Yes---I think any type of milk would work---dairy milk, almond milk, oat milk---
