I’m amazed that Memorial Day weekend is just ahead of us. This month seems to have slipped through my fingers. That feeling of time fleeting just reminds me how important it is to savor every moment, so I will be relishing every bit (and every bite!) of the long weekend. Cilantro Tandoori-Spiced Grilled Chicken

This dish defies healthful grilled chicken’s boring reputation with bold flavor and color from a pesto-like marinade made with an Indian tandoori-style blend of spices whirred with fresh cilantro, lemon juice and oil. The chicken is grilled with the marinade still clinging to it, which not only layers it with the aromatic seasonings and gorgeous deep emerald hue, but also keeps the meat moist and tender as it cooks.
Pesto Potato Salad
With its hearty red potatoes and sweet red and yellow bell peppers tossed in an aromatic basil pesto, this dish is a definite crowd pleaser. It is easy to make, travels well, and is so impressive looking, it has become my go-to dish for bringing to potlucks and barbecues. This pesto potato salad so much more exciting and healthful than a typical mayo-based potato salad!
Blueberry Crumble Bars
These blueberry bars bring the delight of a classic jam-filled, crumble fruit bar but in a more healthful way. Sweetened with whole fruit and a small amount of maple syrup, the result delivers a granola bar vibe. The bars’ nutty base has a lovely chew from dried fruit, jammy centers brimming with blueberry flavor and a crunchy maple-spiked crumble topping.
