I just saw the show “Shucked” on Broadway, a delightfully funny musical that is riddled with corn-related jokes. I chuckled throughout the entire production (in between the jaw-dropping musical performances). Summer sweet corn makes me smile too, but it’s serious stuff— a seriously enticing way to celebrate the season. Of course just-picked corn is amazing eaten off the cob simply boiled and buttered, but there are so many more, out-of-the-ordinary possibilities. These three recipes bring fresh corn to the table in exciting, flavorful ways. I know they will get you grinning as much, if not more, than a corny joke. Enjoy!

This vibrant salad of sweet corn with a confetti of red bell peppers, scallion, radishes and fresh cilantro gets an unexpected, enlivening kick from pickled jalapeños and a cool, creamy effect from chunks of avocado. While you can make this salad any time of year using frozen, thawed corn, it’s best with peak-of-season produce, and will surely shine at your next summer cookout.

Quinoa and corn, both staples of Peruvian cuisine, come together here as the base of these Latin American-leaning grain bowls, topped with grilled chicken, crisp colorful vegetables and buttery avocado, drizzled with a fresh herb sauce. It’s a great recipe for meal-prepping because you can make all of the elements ahead and pull it together whenever you are hungry.
