By now you know, I am always looking for what I call “the sweet spot” where delicious and healthy meet. Why choose between flavor and nutrition when we can absolutely have both?!
Happily, there is a wide world of foods that hit that spot, and none does it better than canned and jarred tomatoes. That’s why I am thrilled to be working with Tomato Wellness to spread the word about them. I recently helped them create a cookbook filled with easy, affordable recipes featuring tomato products. In this newsletter I’ve included a few of my favorite recipes from the book, and a link for you to download the free cookbook.
But first, let’s talk tomatoes. Tomato products add unbeatable savory taste, juiciness and luxurious sauciness to dishes, and their culinary possibilities are limitless. Nutritionally, they are a wonder too, packed with vitamin C, vitamin A, fiber and antioxidants. In fact, canned and jarred tomatoes are an even richer source of the antioxidant lycopene than fresh tomatoes are, because the cooking process concentrates this health-protective nutrient and makes it more easily absorbed. On top of all that, they couldn’t be more convenient and budget friendly.
I got to experience the tomato harvest in California this year, and saw for myself how the tomatoes are picked at the peak of ripeness, and canned within about 6 hours, locking in their flavor and nutrition. Summer tomato season may be over, but canned tomatoes let us access tomato goodness all year long.

A bowl of mussels might seem like something fancy, but mussels are incredibly easy to make, and very budget friendly. Here they are simmered in a fragrant, garlic-and-herb tomato sauce. Serve with some crusty bread or over pasta to enjoy every drop of the tasty sauce.
