Cottage Cheese Pancakes with Fresh Fruit

These cottage cheese pancakes are lightly crisped outside and tender inside, with noticeable nubs of cottage cheese curds and bits of fresh fruit throughout and on top. Held together with egg and a little whole grain flour, and lightly sweetened with honey or maple syrup, they are a filling, protein-packed treat that are as healthful as they are satisfying. Any tender fruit will work, such as pineapple, mango, peaches, and berries.

This recipe takes the popular breakfast bake in a lighter, vegetable packed direction, with a burst of colorful spring vegetables — sweet peas, asparagus, shredded carrot — plus savory sun-dried tomatoes and a whisper of fresh tarragon.

This healthier muffin, made with whole grain flour, applesauce and healthy oil, is the best of the best – tender, cake-y, moist, and studded with barely bursting berries. They’d be nice as a part of a brunch spread, or boxed up and tied with a ribbon as a gift on their own.
