Is soy good for you? How much is too much?
+ recipe for Dark Chocolate Mousse (made with tofu!)
I learn a lot from reading the comments on my posts, and one thing doing so taught me recently is that people are confused and concerned about soy foods. On YouTube, under a video of one of my favorite recipes, Roasted Salmon with Ginger-Soy Broccolini, Mushrooms and Edamame, a viewer asked, “…do you recommend reducing the edamame for men because of soy's effects on estrogen levels???”
While some men worry that soy’s naturally occurring estrogen-like compounds might affect their manliness, many women fear they could increase breast cancer risk.
To cut to the chase, in case you just want the bottom line here, research has debunked these concerns and reveals many upsides of consuming soy. So, you can relax knowing edamame, tofu, soy milk, miso, tempeh, dried soybeans etc.… are healthy choices in the context of an overall balanced diet. Read on to understand why.
