Eggs are a win year-round as an easy, inexpensive way to turn just about anything—salad, grain bowl, toast, pizza—into a protein-rich meal. But they are especially symbolic in springtime, as we witness nature’s renewal and rebirth all around us.
Health-wise, eggs are packed with nutrients, much of which are concentrated in the yolk. Although everyone’s needs are different, as a general rule, it’s best to stick to one whole egg a day for an optimally healthy balance. We are big egg fans in my family! I like the look of the egg bites. I am always on the look out for good foods on the go, and especially ones that will hold well without much refrigeration. How long can those egg bites stay out?
Also, I would love any more ideas for good foods to eat on the go with minimal refrigeration. My husband is an airline pilot and we are always trying to send him on his trips with breakfast and lunch for a day or two to avoid him getting stuck in a spot without a healthy food option. He brings a good ice pack and normally has a refrigerator at the end of his day in the hotel to keep his food overnight. He loves to bring along your peanut butter banana wraps for a day or two, but would love more ideas if you have them!
